The main changes are improved multitasking, better notification shade w/ calendar + weather support, Control Center to get quick access to radios + music + close file-sharing via Airdrop, Siri is better as you can choose between Male or Female voices, new camera UI, and the new built-in music-streaming w/ iTunes Radio just to name a few.
Make sure you properly back up your device via iCloud or on your computer before updating your software. If you are in a Wi-Fi area, you can grab the update over-the-air by going to Settings > General > Software update. You don’t want to restore your device without your previous data on-board. The new iOS 7 is available for the iPhone 4/4S/5, iPad 2/Retina/mini, and the 5th-generation iPod Touch.
